#Recipe: Egg Balado

Serving:  4 people

Preparation: +10 minutes (exclude boiling the eggs)

Balado is a cooking technique from Padang, Indonesia. This technique is to fry and mix red chillies (or sometimes green chillies) with other spices such as onion, garlic and lime and make them into red and hot spicy paste. This paste then will be cooked together once again with fish, chicken, duck, beef, boiled egg, etc. Now I’m going to show you how to cook Egg Balado from boiled eggs.

Ingredients:

  • 1 sachet of “Bamboe Bumbu Balado” instant seasoning (picture below)
  • 4 hard boiled eggs
  • 1 tomato, slice into dice or 6pcs of cherry tomatoes
  • 4 small red chillies
  • 3 cloves of onions
  • 4 to 6 sheets of lemon leaves
  • potatoes (optional), chopped into dice sizes and fried
  • 2 table spoons of cooking oil

How to Prepare:

  1. Heat the cooking oil in a frying pan, and fry the boiled eggs in a low heat until the eggs turn in color then put aside. Be careful as the oil might jump quite high when it is cook together with eggs.
  2. As I’m using the instant seasoning, I saved a lot of time here. Now to heat the instant seasoning/paste all into the same frying pan, with some oil still left from the eggs.
  3. The seasoning paste will be ready when you notice it’s getting richer in smell. Then put all the eggs (usually I stabbed the eggs with fork so the paste can absorb easier into it), tomatoes, red chillies, onions, lemon leaves and potatoes and mix them all together with the paste.
  4. Heat up the pan. You know your dish is ready when the tomatoes are no longer crunchy.
